Chettinad Vellai Kurma or White Kurma is a Tamilnadu style vegetable curry. White kurma is delicious and mildly spiced kurma in which vegetables are cooked in flavorful and creamy coconut based masala. This white vegetable kurma goes well with parotta, chapatti, appam, idiyappam, dosa and idli. White vegetable kurma is purely based from South Indian kitchens. This recipe is extremely easy to prepare and quick to make. The only time consuming process is chopping the vegetables. Adjust green chillies according to your taste. RECIPE FOR VEG KURMA

INGREDIENTS

  • 1/4 cup carrot - chopped
  • 1/4 cup beans - chopped
  • 1/2 cup potato - chopped
  • 1/4 cup peas
  • 1 tsp oil
  • 10 cashews
  • 10 green chilli
  • 1 tsp fennel seeds
  • 1/2 cup grated coconut
  • 1 tsp oil
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 spring curry leaves
  • salt to taste
  • 3 cup water

METHOD

  • add chopped veggies (carrot, beans, peas and potato) in a pressure cooker
  • add 1 cup water and pressure cook for 1-2 whistle, set aside
  • heat a tsp of oil in a pan
  • add fennel seeds, green chili and cashews
  • saute for few seconds
  • add grated coconut
  • saute for 30 seconds to 1 minute
  • switch off the flame and slightly cool down to room temperature
  • transfer into mixer grinder
  • grind to a smooth paste and keep aside
  • heat a tsp of oil in a pan
  • temper with cloves, cinnamon stick and curry leaves
  • saute for few seconds until nice aroma comes
  • add cooked veggies and mix well
  • cook for 1 minute on high flame
  • now add ground paste
  • add 3 cup water and salt
  • mix well
  • bring veg kurma to boil
  • cook for 2 minutes and then switch off the flame
  • garnish with some curry leaves
  • White Veg kurma is ready
  • serve with idiyappam, Chapathi, poori or roti
  • Tastes delicious 😋 
NOTES

  1. adjust green chillies according to your taste
  2. add more curry leaves, it gives excellent flavor to this kurma
  3. add veggies of your choice
  4. after adding coconut paste, boil only for 1-2 minute, once cool down, the kurma will become thick
