Palak Paneer is an evergreen delicacy from North India and its one of the most interesting ways to include spinach in your diet. Palak paneer is a vegetarian dish consisting of paneer (Indian cottage cheese) and pureed spinach, called palak in Hindi. Its one of the traditional recipe, which is perfect for special occasions, festivals, pot lucks or any get-together. Palak paneer tastes good when served with Chapathi roti, naan, or pulao. This recipe is high on fibre and rich in iron. For vegan options substitute paneer with tofu and fresh cream with cashew paste. This recipe is easy to cook and made within 30 minutes. RECIPE FOR PALAK PANEER

INGREDIENTS 

  • 2 bunch spinach leaves
  • 3 green chilli
  • handful of coriander leaves
  • 1 tbsp ghee
  • 1/2 tsp cumin seeds
  • 2 tsp garlic - chopped
  • 1 tsp ginger - chopped
  • 1 large onion - thinly sliced
  • 1 green chili - chopped
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/4 cup curd
  • 1 tbsp wheat flour
  • salt to taste
  • 1/2 cup water
  • 1 tbsp fresh cream
  • 1 tsp Garam Masala
  • 1 tsp lemon juice

METHOD

  • bring water to boil in a sauce pot
  • add pinch of salt
  • add spinach leaves
  • cook for 1 minute until wilted
  • get the spinach leaves out and put the leaves in ice cold water (this helps the leaves in retaining their  green color)
  • in the blender, add the blanched spinach,  green chili and handful of coriander leaves
  • grind to a smooth paste and set aside
  • heat ghee in a non-stick pan
  • temper with cumin seeds
  • add chopped ginger and garlic
  • saute for few minutes
  • add thinly sliced onion
  • cook for 2-3 minutes until soft and translucent
  • add chopped green chilli, turmeric powder, red chilli powder and cumin powder
  • mix well and cook for 1 minute
  • add thick curd
  • mix well and cook for 1 minute in medium flame
  • add spinach puree
  • mix well and add half cup of water
  • add a tbsp of wheat flour (it acts as a thickening agent)
  • add salt and mix well
  • cover and cook in low medium flame until the ghee releases from the masala
  • mix well and cook for 3 minute
  • add fresh cream and cook for 1minute
  • add garam masala powder and lemon juice
  • mix well and then switch off the flame
  • serve palak paneer with Chapathi, naan, rice or pulao
  • taste delicious 😋 
NOTES

  1. for vegan options substitute paneer with tofu
  2. replace fresh cream with cashew paste
  3. use baby spinach for better taste
