Spinach Poriyal is a quick and tasty side dish recipe that can be prepared in 10 minutes. You can use any kind of greens for this recipe. Here I am using baby spinach. It is an extremely nutrient rich vegetable. It packs with high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron and calcium. It goes well with Sambar Rice and rasam rice. RECIPE FOR SPINACH PORIYAL

INGREDIENTS
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1/8 tsp hing
- 1 spring curry leaves
- 1/2 cup onion - chopped
- 2 green chilli - slitted
- 3 cup spinach leaves - chopped
- salt to taste
- 1/2 cup grated coconut
- heat a tbsp of oil in the pan
- temper with mustard seeds and urad dal
- add hing and curry leaves and saute for few seconds
- add finely chopped onion
- saute well until transparent
- add slitted green chilli and saute well until the raw smell goes
- add chopped spinach leaves
- saute well in medium flame, water starts to release from the leaves
- mix well, spinach leaves will starts to shrink in size
- now add grated coconut and mix well
- cook for 1 minute and then switch off the flame
- healthy spinach poriyal is ready
- serve with Sambar Rice or rasam rice
- tastes great
- no need to add any water for this recipe
- you can replace green chilli with red chilli
- you can skin grated coconut, if you don't like, but the taste will be good
